Bottle of the Month: Empirical Cilantro
Speaking of unusual sips, Empirical focuses on making “uncategorized” spirits ( maybe you remember last year’s Doritos collab), and a month ago it released a new Cilantro spirit ($35). It’s the first debut from a new R&D lab in New York, in Brooklyn’s Bushwick neighborhood. (Empirical is now a fully US-based company, after the original Copenhagen distillery shuttered at the end of 2023.)
