Stonefruit Tom Collins

Ingredients

2oz Empirical Stonefruit
1oz lemon juice
1oz simple syrup (1:1) 
Soda water
Lemon zest for garnish

Method

Pour Empirical Stonefruit, lemon juice and simple syrup in a shaker over ice.
Shake vigorously.
Double strain into a highball over ice. Top with soda water and garnish with lemon zest.

*For the simple syrup: mix sugar and water in a 1:1 ratio, dissolve over a light simmer, and cool down.
