A bright, floral Symphony 6 highball with lime, honey and soda.

Citrus leaves and flowers lead in Symphony 6. A drop each of citric acid and salt solution sharpen it, and lime cordial and honey water round it out before the soda: a summer drink in its simplest, freshest form.

- ¼ oz Lime Cordial*
- ¼ oz Honey Water (1:1 honey:water ratio)
- 1 drop Citric Acid (5:1 water:acid ratio)
- 1 drop Salt (5:1 water:acid ratio)
- 2 oz Soda Water
- 30 ml Symphony 6
- 10 ml Lime Cordial*
- 10 ml Honey Water (1:1 honey:water ratio)
- 1 drop Citric Acid (5:1 water:acid ratio)
- 1 drop Salt (5:1 water:acid ratio)
- 60 ml Soda Water
Alternatives
- Lime cordial — fresh lime juice with simple syrup.
- Citric acid solution — fresh lemon or lime juice.
- Saline solution — a small pinch of salt.
Method
- Combine Symphony 6, Whiskey, cordial and acids over ice in a highball.
- Top up with soda water. *To make lime cordial:
- Combine 10 lime zests and 500 g sugar to make an oleo saccharum.
- Add 150 ml lime juice, 350 ml water and 5 g citric acid. Dissolve and strain.
