Citrus leaves and flowers lead in Symphony 6. A drop each of citric acid and salt solution sharpen it, and lime cordial and honey water round it out before the soda: a summer drink in its simplest, freshest form.
Ingredients
- 1 oz Empirical Symphony 6
- ¼ oz lime cordial*
- ¼ oz honey water (1:1 honey:water ratio)
- 1 drop citric acid (5:1 water:acid ratio)
- 1 drop salt (5:1 water:acid ratio)
- 2 oz soda water
- 30 ml Empirical Symphony 6
- 10 ml lime cordial*
- 10 ml honey water (1:1 honey:water ratio)
- 1 drop citric acid (5:1 water:acid ratio)
- 1 drop salt (5:1 water:acid ratio)
- 60 ml soda water
Alternatives
- Lime cordial — fresh lime juice with simple syrup.
- Citric acid solution — fresh lemon or lime juice.
- Saline solution — a small pinch of salt.
Method
- Combine Symphony 6, lime cordial, honey water, citric acid and salt over ice in a highball.
- Top up with soda water.
- *To make the lime cordial: combine 10 lime zests and 500 g sugar to make an oleo saccharum.
- Add 150 ml lime juice, 350 ml water and 5 g citric acid. Dissolve and strain.
