A Key Lime Pie in the shape of a Ramos Gin Fizz.

Lime, cream and egg white make the pie's filling, while Empirical Stonefruit and winter melon tea syrup bring the pastry, with a nutty, baked depth. Dry shake, shake again with ice and top with soda for a tall, silky foam. Lance Wong's version of the Double Chicken Please original.

- 1 oz Gin
- ½ oz Empirical Stonefruit
- ½ oz Winter Melon Tea Syrup
- ¾ oz Cream
- ¾ oz Egg White
- ¼ oz Rich Syrup (2:1)
- ¾ oz Lime Juice
- Soda Water, to Top
- Garnish: A Spritz of Lime Bitters
- 30 ml Gin
- 15 ml Empirical Stonefruit
- 15 ml Winter Melon Tea Syrup
- 20 ml Cream
- 20 ml Egg White
- 10 ml Rich Syrup (2:1)
- 25 ml Lime Juice
- Soda Water, to Top
- Garnish: A Spritz of Lime Bitters
Method
- Winter melon tea syrup: mix 1 to 2 parts winter melon tea (dong gua cha) into 1 part water, to taste.
- Dry shake everything but the soda (a milk frother works), then shake again with ice.
- Pour into an 8 oz glass and top with soda.
- Spritz with lime bitters.
