Ayuuk Flip

Ingredients

• 4cl Ayuuk
• 2cl Px Sherry
• 1cl Manzilla Sherry
• 1 whole free-range chicken egg

Alternatives

• PX Sherry — cream sherry, or tawny port with a little demerara syrup.
• Manzanilla Sherry — fino sherry or very dry vermouth.

Method

1. Add all ingredients to shaker.
2. Dry shake.
3. Fill shaker with ice.
4. Hard shake.
5. Fine strain over a large ice cube.
6. Add mace on top for garnish.
