Ingredients
1 oz Empirical Stonefruit
1 oz espresso
tonic (to top)
Garnish: grapefruit zest
30 ml Empirical Stonefruit
30 ml espresso
tonic (to top)

Method
Pour your Stonefruit and espresso into your highball glass. Add ice cubes to the rim of your glass. Top up with tonic and give it a gentle stir. Garnish with a grapefruit zest.
