Double Chicken Key Lime Pie

A key lime pie in the shape of a Ramos Gin Fizz.

Lime, cream and egg white make the pie's filling, while Empirical Stonefruit and winter melon tea syrup bring the pastry, with a nutty, baked depth. Dry shake, again with ice and top with soda for a tall, silky foam. Lance Wong's version of the Double Chicken Please original.

Ingredients

  • 1 oz gin
  • ½ oz Empirical Stonefruit
  • ½ oz winter melon tea syrup
  • ¾ oz cream
  • ¾ oz egg white
  • ¼ oz rich syrup (2:1)
  • ¾ oz lime juice
  • soda water, to top
  • Garnish: a spritz of lime bitters

Method

  1. Winter melon tea syrup: mix 1 to 2 parts winter melon tea (dong gua cha) into 1 part water, to taste.
  2. Dry shake everything but the soda (a milk frother works), then shake again with ice.
  3. Pour into an 8 oz glass and top with soda.
  4. Spritz with lime bitters.
